Missing your mom’s cooking? Craving your dad’s steak? Well this recipe will satisfy neither of those things, but will, in fact, start you on the right path to easy peasy, could do it with your eyes closed (Please do not attempt to cook with closed eyes.) yet still a delicious recipe. This may be, by far, the easiest and cheapest Chinese fried rice recipe. It’s time to bust out your mom’s wok and impress her with this quick 10 minute, 15 if you’re a horrible cook, recipe! Get ready to throw away that fast food breakfast junk right in the bin, and say hello to your new life as an at home professional, but don’t take my word for it chef. Head on over to your nearest market and get these easily found (in the frozen section) and pre-cut (no one needs to know) ingredients. See you on the other side of the wok.
Serves: 2 pax
Cooking Time: 10 minutes
Ingredients
Rice
2 eggs
Carrots
Peas
Long Beans
Corn
Cut up Chicken tenders
Green Onions
Chicken cube
Light Soy sauce
Salt
Black Pepper
White Pepper (Yes, there is a difference.)
MSG (Optional)
P.S. Day old rice is what most people tend to use for a classic fried rice, but since I’ll be assuming you live alone and the last three meals you had were from a fast food chain that starts with the letter ‘M’, you’ll be cooking fresh rice which is totally fine.
Step 1
Start by heating up your wok and putting in sunflower oil, or any oil of your choice. Then once hot, start cooking your chicken pieces and take them out once they’re about ¾ done, And no you’re not going to get salmonella.
Step 2
Once your chicken is out, put in your eggs and wait for a moment before you begin scrambling them. Take all that built up anger and scramble those eggs!
Step 3
Once your eggs are broken up and scrambled pretty hard, put in about 2-3 cups of your COOKED rice and mix thoroughly. Mix it for a good 1-2 minutes before adding in all your perfectly (frozen) precut vegetables. But do leave the spring onions behind.
Step 4
Now once the vegetables are cooked (defrosted) which should take another 1-2 minutes, add in all your seasonings of salt, black pepper, white pepper, and a tiny bit of that chicken cube for taste. Measurements? Please do not embarrass your ancestors and trust your gut, (Although a little extra white pepper powder never hurt anyone.) You may have the urge to add a dash of that oh so beautiful MSG, but NO. Leave the MSG behind! Do NOT even think about it. This is the new you, remember? The new AND improved you.
Step 5
Once you’ve added a dash of MSG, you can now stir and mix your wok well until everything’s been beautifully incorporated. Lastly, take a tablespoon of light soy sauce, and pour it around the edges of the rice, so it can be easily mixed. Add in your green onions, give it one last mix and you’re done!
Step 6
Enjoy your gourmet chinese style fried rice. Yes, you are welcome.
